A Tapas Taster - It is said that the original tapas were the slices of bread or meat which sherry drinkers in Andalusian taverns used to cover their glasses between sips and keep the fruit flies away from the sweet drink. The meat served was a salty ham or chorizo which encouraged thirst – and alcohol sales! Restaurant owners began to create their own variety of snacks to serve with the drink and the tapas eventually became as important as the sherry. Over the centuries, tapas has evolved from the Romans who brought the olive, to the discovery of the New World which introduced the tomato, pepper and potato.
